Gummy depositing cooks a syrup of sugar, a gelling agent — gelatin or pectin — and water to a target solids level, blends the active and the color and flavor into it, then deposits a metered shot of that hot slurry into a mold cavity. The pieces cure and set, demold, and get a finishing coat of oil or sugar-sour. It looks like candy-making because it is candy-making — which is exactly why the dose part gets treated as an afterthought.
It is, in fact, a dose form. Each gummy is a unit, the way a tablet or a capsule is a unit, and the label makes a claim about how much active is in it. The whole control problem is making the slurry uniform and the deposit consistent so that claim is true in every piece — not just on average across the batch.
The levers are the cook temperature and time, the solids and water activity at deposit, how thoroughly the active is dispersed before depositing, the deposit shot weight, and the cure. They interact: cook too hot or too long and heat-sensitive actives degrade; disperse poorly and the active stratifies so some pieces run rich and others lean; let water activity drift and the gummy goes microbially unstable on the shelf.
Two forming routes share the same dosing problem — starch-mogul depositing into powder-printed molds, and depositing into reusable silicone or metal molds. The mold changes; the question of whether each cavity got the same dose of intact active does not.

Content uniformity is the attribute that makes or breaks a gummy line, and it’s the one a finished-product test is built to miss. Composite a handful of gummies, grind them, assay the pool, and you get a batch average that can look perfect while individual pieces swing high and low around it. The label claim is a per-piece claim; the test that matters is per-piece uniformity, not the composite. A children’s product makes that gap unforgiving — the same milligram error is a far bigger fraction of a small body’s safe intake.
Heat is the second problem. Probiotic cultures, vitamin C, methylcobalamin, and other labile actives lose potency in the cook, so makers add an overage — extra active up front to cover the loss. That’s legitimate practice, but it cuts both ways: an overage sized for an average loss will overshoot the pieces that didn’t degrade and undershoot the ones that sat hottest, and a generous overage can quietly mask a uniformity problem the line never fixed. Water activity is the third — let it climb and the gummy supports microbial growth on the shelf. The discipline is per-piece uniformity data, an overage justified by real degradation study rather than guesswork, and water activity held in spec from deposit to package.
