Acidified and acid foods processing holds a food at a low enough pH — ≤ 4.6, often ≤ 4.0 — by adding acid (acidified) or by natural acidity and fermentation (acid foods), so that Clostridium botulinum and other pathogens cannot grow. That allows a much milder heat process than low-acid foods require. The pH is the safety barrier, and proving it’s achieved uniformly is the entire control.
It’s a trade of chemistry for heat: get the acidity right and you avoid the full retort, preserving quality — but only if the pH is genuinely controlled everywhere in the product.
The levers are the target equilibrium pH, the acid type and amount, equilibration time, and pH verification. The word that matters is equilibrium — the acid has to penetrate fully through every component, including any low-acid pieces, before the pH is safe to trust.

The pH barrier only works if every part of the product reaches it.
A registered acidified-foods process — with a filed scheduled process and a process authority — rests entirely on every part of the product reaching the safe equilibrium pH. A salsa with low-acid vegetable pieces that haven’t equilibrated, or a pH that drifts batch to batch, recreates the exact botulinum hazard the acid was supposed to remove.
This is a classic, well-known gap: an acidified product run with no scheduled process and no per-batch pH verification — safe by assumption, not by proof.
